in womens tennis(as well as doubles) they dont.
however in mens tennis in grand slams as well as the finals of the other minor tournaments they go to a third set or further cos in such cases u got to play a five setter that is win 3 sets out of five sets to win.

in men's a player should win 3 sets 2 go through and in womens it is 2 sets.

I take it you're talking about a "best of five"-match.
Even if a player has won the first two sets, it is still possible the other player catches up, and eventually even wins the match!
(as did Safin, and also Hewitt in these Australian open)

Only in the four Grand Slam events in men's singles, must you win 3 of 5 matches. In most other tournaments it is usually best of three unless it is a major event.

in grand slams, or opens, the men always play best of five sets, so if someone wins the first three sets, they stop.
in a few of the other tournaments, they play best of five for men, but in most its just best of three.
for women, im pretty sure they always play best of three.
i dont know any tournaments where they play five.
