I put in a new cartridge because the old one only printed certain colors. The new one won't print color at all. The computer is a Macintosh and the printer is an Epsom color 740.

Either you are out of the color cartridge or you need to change the settings/properties of your printer.

if thats the porblem go get your printer checked, epson i have had bad experiences with that printer and later on got on HP i have been using it since 6 years and has never given me a problem since, either with ink or printing.

the fact may be that your ink cartridge may be jammed. replace or give the same back to the dealer and he will cheerfully return it back . a new one.
