I love the ingenuity of the Romans and the Greeks in their architecture, inroads to law, their attempts at establishing various types of governments, and the history that comes with such longevity as a nation, a civilization, and an empire (for the Romans).

The Romans were very advanced in law. In fact, the English adopted and incorporated a great deal of law from the Romans. We still make use of Latin in legal proceedings, showing how extensive and influential the ancients are to this day still. Of course, that's largely due to people all through the years exercising it because Latin became the language of the educated.

I can't narrow this down to any one ancient civilization, but many of them featured one great aspect: People knew their place.

I know that sounds incredibly horrible, but it's what I loved about lost ages. People didn't always have to be in some form of social strife and struggle with identity and so on. They just lived their lives. Men were men, women were women, and children were children. People believed in powers greater than themselves, and most lived honest, decent lives. People were more inclined to work and not victimize themselves and look for hand-outs. Life was much shorter, and thus, people valued it more, and lived it more fully.
