You have to create it in your mind first. If you cannot "see" the structure in your mind, then it is impossible to create it with the software. You will end up with a big mess that doesn't make sense.

Liken your question to this one: "How do you paint a beautiful picture". Is the right answer that you buy a brush and some paint and dab the paint on the brush then smear it across the canvas? I think not.

Try reading "The Relational Model" by Edgar Codd. It is short and succinct and will open your mind like a flower. If it doesn't, then you're not suited to building databases.

Before jumping in and creating the database, you need to plan what you are going to do based upon the scenario that you have been set.

I would look over some of the articles at databasedev, in particularly Relational Database Design Planning: http://www.databasedev.co.uk/planning_database.html and Planning a Microsoft Access Database Application: http://www.databasedev.co.uk/plan-an-access-application.html

You first have to learn what a relational database is, what the different queries in SQL are, etc. Once you've mastered that, you start learning Access. Learning to create and maintain a database isn't something you can learn in a month. (Database design, alone, is a subject that takes years to master.)
