I know there are different things to consider, so how about with union, non union or own boss? how's the market, supply and demand?

In New York it would be the union electrician.

Overall, electrician (union or not), but it also depends on experience and just what you are qualified to work on. [ex : installer vs technician].

It's also going to depend on where in the country you live. In colder climates I would say electrical but in warmer probably HVAC.
