What are the different options available in aeronautical engineering?

I'm not an aeronautical engineer but will give this a try:

1. Materials science/engineering.

2. Propulsion

3. Airframe design and mechanics

4. Test systems (wind tunnels, etc.)

If you'd like to read a good book about aeronautical engineering, I recommend "No Highway" by Neville Shute. It is a novel about a single-minded engineer and it's a pretty good story. The nerdy engineer even gets the girl at the end.
