I don't want to say "sincerely" or "from" or "yours" because I want to be more personal than that. However, I don't want to say "love" because I think that "love" should be reserved for a girlfriend, and not be used for a girl friend. Should I say "with love from"?

Am I just overthinking this?

yes, you are.
Try "See you soon"
"hope things are going well"
that sort of thing...
I mean, what would you say in person?
go with that - that way the letter sounds like its coming from you and not Hallmark

"Always". It's noncommital and vague enough to be taken a number of ways.
