Contamination buildup that may have gotten in the bottle during process. I suspect it has more to do with avoiding lawsuits then anything else. If somebody drinks a 5 year old bottle of water and get diarrhea they might sue the company. The sell by date is the bottlers safety net.

DUH.........Volcanic rock vs. Polyethelyne bottle. Bacteria could begin to grow i the bottles with exposure to light. Chlorine oxidizes with exposure to light therefore if exposed for great periods of time it could deplete the residual chlorine. Also if left for long enough the plastic taste of the bottles would permeate the taste of the water.
