I know what you mean. I get good ideas, write them down, and then never get back to them. The discipline I have developed now is this: I pledge to myself that I will work for a certain amount of time or write a certain number of words each day. I had my first finished article published just recently. Feels good.
It really helps to set some expectations and goals for yourself. Then you can reward yourself when you've finished, or the reward is just actually BEING FINISHED!!
I know how you feel. Have faith in yourself, get on the ball, and you can finish your stories... one by one.

I have that problem too. Sometimes I start with an outline of what I think the story is about, the people in it, time line and an idea of how you want it to end. Then write it. Just let the words come. Your thinking too much, when you really should just let it flow. If you do get stumped, put it away for a while. The next time you feel like writing or get an idea for it, take that story out and write whats on your mind. Remember that your first version is a draft and shouldn't and won't be a publishable version. Later, when its done, go back and make corrections and revisions. Good luck.

The people who suggested having an ending in mind at first are right on the money in my opinion.
I used to write myself into a corner, and think "how can I get out of this?" I didn't have the end in mind when my plot took twists and turns and it became a total mess.
The people who have the principles for life and say "begin with the end in mind" or something like that get paid a lot for their seminars, so listen to what they say.
Discipline is also a big factor, if you force yourself to commit something to paper, you can later discard it but perhaps save a few good sentences or ideas for a more inspired session later.
Keep with it, the Japanese sword masters practice drawing and sheathing the sword hundreds of times before they ever learn techniques...

Self-discipline. Approach each story one at a time...unless you can find a way to link them all together somehow. Find a comfortable place. Make a cup of tea. Relax. Take a deep breath. I would agree disciple is important. I find by reading other books or short stories gives my ideas for ending of my own stories, but motivation and by part of it. However I don't discount the idea that sometimes I have to what for inspiration to take over to finish my story, and they may be .....a long time!!!

Maybe you shoud write the end first! Just kidding. I write poetry and that happens to me a lot but I save all my unfinished poems and work on them at a later date.

This is all dependant on your motivation to finish. You're just in a chapter in your life where you haven't had that motivation. You'll get there. Keep going!
