In my opinion, Monty Python and the Holy Grail definitly has the best opening credits ever. In addition to the unforgettable captions at the bottom of the screen, there're all sorts of jokes hidden in the credits themselves. I'm still catching new things in there, and I've watched that movie quite a few more times than is probably healthy.

Se7en - the eery Trent Reznor soundtrack, so many deep and meaningful biblical allusions, disturbing content which sets the tone of the film, references to the nature of Kevin Spacey's character and mindset.... amazing!!!
I took a film studies course and spent weeks analysing opening credits. It's amazing how much thought goes into them. It is an artwork in itself.
Catch Me If You Can also has a great opening credit sequence

I like The Prisoner of Azkhaban for end credits. All those little footprints - it cracks me up! Front credits, eh? Gotta think about that.

I would say Fight Club's "Gun in the mouth" was a great start. "Seven" also had a killer opener. Eerie.
Don't know of a site for The Jackal, though. Sooooorry.
