I want to take a week's long leave from work for IELTS preparation but want to conceal it from the boss at the same time. What can be the best way of putting it on an application/letter or what can be my alternatives, any suggestions guys? I can't mention IELTS.

If you are taking leave without pay, what you do during that week doesn't matter and does *not* need to be spelled out, because they are not paying for it. Tell them you need to take a week off to prepare for a correspondence (take at home) course that you plan on taking--say, you need to read a couple of books first or something. No more information should be needed--you do not need to mention a test. I would recommend verbally going instead of via email or letter--it would seem that you have less to hide that way. Also, mentioning a few other things that you need to get done during the off-week may make you less nervous when making the request.
