plates are set the usual and we use spoon and fork sometime with bare hands. food are placed at the center of the table, sometimes complete (chicken, fish, veggies, beef, pork) in different styles of cooking. rice must definitely be there. there is a saucer for each one where we put condiments appropriate for the food(fish sauce, vinegar, kalamansi(lemon for some) or tomatoes).

Strange... 9 times out of 10 you get rice. With the rice sometimes comes a boiled tomato (to mash up with the rice and eat with the hand). Usually you get some meat (baboy) pork with loads of fat, or (baka) beef cut up into pieces just a tad bigger than a mouthful. Your utensils at home or in a restaurant are a soup spoon and fork (you can cut up your meat with either one). Oh - and the utensils are usually made or seem to be made from sheet metal. In any case, they're usually twisted up after your meal.
The Filipinos do have some excellent food though - Sisig, Bicol Express, lechon Manok (roast chicken), and many others (but don't belong in this answer).

every meal course is placed in the middle of the table. and the individuals would take only the portions they wished to eat, using a serving spoon or fork. Filipinos use spoon and fork to eat=)
