Are you asking what chemical components make up ketchup? That is not a simple answer because there could be literally thousands of things in there. Tomatos have their own complex structure consisting of sugars, water, proteins, cellulose, pigments, etc.... I'm not sure what you mean by properties. Are you referring to pH, density, reactivity? Some extra information would help.
