Dim Sum IS a Cantonese specialty, although there are different types in other regions of China and Taiwan. I would think the best places to look would be Hong Kong (#1 and mostly Cantonese), followed by Guangzhou (Canton). Dim Sum is practically a way of life for the people of Hong Kong on weekends, and I've personally ate at a Dim Sum restaurant that could seat 6,000 people. I would go to Hong Kong, ask the locals where the finest Dim Sum can be found, and I think you will find what your looking for. Good luck!

in H.K., but there are some very traditional dim sum restaurants in Taiwan too, especially in Taipei.
