People of poorer cultures learn to make use of every part of the animal. Nothing goes to waste. Believe it or not the people in the US were that way too years ago until we as a country became rich and wasteful.

Well I've tried brains and tongue, but intestines... I don't think cow intestines are really good for anything, unless you particularly like the taste of intestines. Well actually I have had pig brains not cow brains. My grandma used to make them for breakfast. You cook them on a skillet with onions and add eggs, its pretty good, you just have get over the whole fact that you're eating brains. If you think intestines are disgusting... what do you think they used to make sausages out of??? Although most sausages are made with pig intestines, I think. They didn't always have plastic artificial intestines. Cow tongue doesn't taste bad, but its kinda like trying to eat gum, depending on how its cooked. I guess I'd go with the cow tongue.

It's not just mexicans- rural southern balcks and whites do as well- it is related to an extremely poor economy- you eat anything of nutritional value since you can not afford anything else.. this "food culture" continues in to hte next generations even if they are better off

I'm a part mexican and my grandfather/grandmother and mother are full mexicans, they have never eaten such. Nor have any of the mexicans I knew. Where did you get your information from, a racist?

I'm not Mexican, but I can tell you sweetbreads (brains), and tripe (cow stomach) is DEEEEElicious!
