It is a mixture of various compounds. Coffee is not a pure substance. It contains many different compunds, and as you might realize, there are different variety of coffee beans with variou scompositions.

So when instand coffee is mixed with hot water, these compounds are solubalized (dissolved) into a homogeneous mixture

Mixture by definition is that two or more substances mix together. It dose not necessarily mean that it reacted to form the mixture. Compound is a chemical change that occurred during a mixture of two substances.
Instant coffee mix with water is not a compound, it is a mixture.

Further more:
If two substances change its chemical and quantum mechanical properties (atomic level), then it is a compound. Evidence of such reactions: -two room temperature substances mix and it get hot with out applying the heat. –the liquid forms solid particles. Etc, etc
If two substances just mix each other’s molecules, then it is a mixture and it can be reversible. For example, I can mix salt in water and if I heat that water in a chamber that capture gaseous water, then I can have both water and salt as it used to be.

It's a mixture. There isn't a chemical reaction between the caffine in the coffee and the water in the cup, the coffee stuff is just a soluable suspension in the water.

Its not a mixture coz u cant identify the water from coffee nor a compound coz no new entity was formed, it just becomes a solution coz anything added to water becomes a simple solution either mixed with a solid liquid or gas.

It is a mixture, it can be separated by ordinary means, a compound is when two elements are chemically bonded (ionic, covalent or matallic bonds).

off course...it's a mixture becoz there was no chemical reaction.
