Stars are classified in several ways. Typically we use the spectral class/type and luminosity class - for example our Sun is a G2V star. Spectral type corresponds with the color of the star, which also corresponds with its temperature. Luminosity class tells us the size and brightness of the star.

Stars are also classified by their apparent magnitudes - how bright they appear to be in our sky.

Galaxies fall into three broad categories: spiral, elliptical, and irregular. They are classified by their shapes.

There is only one universe, so there's no need to classify it.
