375 refers to 9 carat gold. It stands for 37.5% pure gold.
Pure gold is known as 24 carat gold so 9 carat is 37.5% pure
18 carat is 75% pure (marked 750) etc.
Gold is alloyed with other metals to make it more durable as pure gold is very soft and unsuitable for hard wearing jewellery.
This mark will usually be found in a row of marks. These will include a letter stamp for the year of manufacture, a symbol (lion, 3 castles etc) which shows which city's assay office it was marked in and the standard (375 / 750 / 916) as well as a manufacturers mark.
