The microbe used in bread making is yeast. The yeast eat the sugars and starches in the dough and make carbon dioxide gas which raises the dough and makes it fluffy. The yeast also make alcohol as a by-product, but this evaporates during the baking.

Yeast is a microbe. It is alive. It consumes the sugar in the bread dough and one of the byproducts it produces is carbon dioxide which causes the bread to rise.

Flour, yeast, water, salt, oil.
