If the person drank the water or ate the food? (The aluminum sauce pan has a dark ring inside where, apparently, the minerals in the water reacted with the aluminum in the sauce pan.)

It's much safer to leave it dark and ugly.

My personal rule is that acidic foods should never be cooked in aluminium pans. I no longer own an aluminium pan. If you cook acid foods in Al you ingest Al salts.

As an amusing experiment, next time you open a tin of pineapple, keep back one slice and wrap it in Al foil overnight.

Have a look at it next morning and ask yourself if you really want to eat that.

I disagree w/ the previous two answers. Acid conditions will passivate aluminum, coating it w/ a layer of aluminum oxide forming a very chemical resistant surface. Basic condition will corrode it. Items like beer and soda are acidic (coke is around pH = 3) and are regularly shipped in aluminum cans.

Concentrated acids at high temperatures can be corrosive to aluminum, but it unlikely that your pot was exposed to those conditions. It is more likely that you have hard water w/ a high carbonate content which discolored (but probably not seriously damaged) the pot.

The acid in fruits and vinegar will leach some aluminum. That is what makes the ring. The amount is probably too small to worry about.

it sounds like it just got oxidized which isn't bad at all. you might want to filter that water just to be safe, but it shouldn't be all that hazardous. the water company has to tell you if the water is unsafe to drink.
