They pay taxes just like everybody. As farmers or self employed.

The Amish not paying taxes is a huge MYTH.
They file taxes like most people either on paper forms or with an accountant .

Most are self employed or farmers.

While the Amish have no objection "paying unto Caesar what is Caesar’s," they do have problems with commercial insurance. In a sense, insurance was seen as not trusting in God. Insurance plans were a worldly operation. Plus, the Amish view of separation of church and state normally meant not accepting money from government programs, especially something viewed as welfare.

Tucked away in the 1965 Medicare Bill was a clause exempting the "Old Order Amish" and other religious groups that conscientiously objected to paying insurance premiums from Social Security tax. To be exempt, the group or sect must have been established prior to 1950 and maintain reasonable provisions for their elderly.

There are too many different ordains to answer for them all but of the Amish communities I know (Ohio and SE Minnesota) they pay all the same taxes as we do except social security as they don't collect social security. They have to pay sales tax on anything just like the rest of us in America.
Sometimes the boys and men work on construction crews or modern dairy farms and the like. They are allowed to take a driver if they have to go quite a distance. Unfortunately the women in the communities I'm familiar with don't allow this. This is because the men are to be the primary providers and it also isn't seen as safe for the women.

Self-employed Amish do not pay Social Security tax. Those employed by non-Amish employers do pay Social Security tax. The Amish do pay real estate, state and federal income taxes, county taxes, sales tax, etc.
