For most of my classes, we didn't have standard activities. We used the additional time like a study hall, working on whatever other homework we had, reading books of our own choosing, writing notes, etc. If you find your students aren't disciplined enough to choose their own activities, some suggestions in addition to your ideas of a library or extra-credit worksheet (which are great ideas) are:
- Have Soduku or crossword puzzle books available (Soduku especially because it involves math to some degree)
- Have Games magazines available
- If possible, let the kids who are finished go to another room or the hallway to play games or socialize (not always possible depending on your school layout)
- On the blackboard, post a difficult math equation or two relevant to the section you are working on. Have students keep their tests to work on the equations for extra credit.
- Have decks of cards available for students to play Solitaire or other single-player card games.
- Post the next day's reading and/or homework assignment on the board for students to start on.
It's difficult to think of separate activities for students to do that are quite and non-distracting, but for the most part students have things they will want/need to work on from other classes. Letting those students do that, and offering the choice of a few activities to the other students, often works best.

I teach elementary but when my kids are finished with a test or any assignment before the rest........the rule is read a book. No one sits in my class and does "nothing". That's the rule. But my kids love reading and even the ones who don't just look at the pictures. But it is better than sitting with their head down or sleeping.

I guess I'm a slavedriver. When my students finish a chapter test I have them pick up their next study guide and begin the assignment. Either that or I have them do a reading that introduces them to the next topic.

I also teach high school, and (as odd as I know this sounds) my students enjoy coloring sheets, word finds, and puzzles. I keep several on hand at all times and are REALLY used after TAKS tests. You will also need to keep a supply of markers, map colors, and crayons on hand for this.

Our teachers give us a worksheet, the homework, extra credit papers, they let us read our books, they let us doodle, or even sometimes they let us do other homework. I love my teachers they are so nice.
