I don't think Pixar has released that information yet. Their website says that Rataouille is their latest release.

NEVER MIND THE ABOVE POST...I found this article saying that Pixar's next project is called "Wall-E"

Whatever their next movie is, Dreamworks will find out and release the same exact movie. Shrek, Snurks. Madagascar, The Wild. Ratatouille and Flushed Away are the next in a long line.
