You just aren't turning fast enough. The light reflects from the back of your head, travels to the mirror, is reflected again and ends up back at the spot where it started (assumes you are standing so that the light strikes the mirror perpendicular to the mirror's surface). That trip takes time. It is not instantaneous. So if you turned quickly enough you could get your eyes around to where the back of your head had been and see the back of your head in the mirror.

The farther you stand from the mirror the more time you'll have to turn. The sun is around 93 million miles away from Earth and light takes something like 8 minutes to make that trip so if you can turn your head in 1/2 a second you just need to stand about 193,000 miles from the mirror.

Use a hand held mirror in front of you and you can see your head in the mirror behind you. You've got to be kidding with this question, right?

Hold in your hand a small mirror.
Stand infront of the large mirror.
Hold your hand with the small mirror up and point it at the back of your head to the side.
Look in large mirror.

if you really need to see the back of your head, you can hold a hand held mirror in one hand behind your head and look in the big mirror.... it sort of works...
