Unfortunately you did not mention your status of residency in Melbourne, since there are courses that cannot be taken by overseas students in Australia due to the course accreditation, delivery mode and duration. You may try this website (www.idp.edu.au) which is a semi-government information provider for overseas students who want to study in Australia.
However if you are interested in hospitality short courses (bakery is one of them), I have provided some institutions' weblinks for you to browse.

Try Swinbourne Tech. or check out the many "continuing education" classes that are run on evenings in most towns and cities
