it's not an abbreviation.

it is an anglicized form of the old french word HOSTEL.

most french words that have been anglicized were inserted with letter S where the usual french diacritical mark is located. for example, the french word FORET (with a mark above letter E) is written as FOREST in english.

same thing applies with the word HOTEL.
