You would use a natal chart. Based on the date, the location and time where you were born.
This will determine your rising sign, moon sign etc.

The Sun does not pass through constellations.The Earth orbits the Sun and as it does so, we see different stars behind the Sun. The stars are more or less randomly scattered through the sky but humans like to make patterns so we pick a few bright ones that are totally unrelated to each other that make a recognisable pattern, call it a constellation and give it a name. We see some of these patterns behind the Sun and say the Sun is moving through them but it isn't. We are doing the moving, not the Sun.
Precession has alredy been mentioned. Astrologers ignore this and ponderously tell us the dates of the Sun signs. These dates have not been accurate since 2000 or more years ago. Precession is the wobble in the axis of the Earth's spin and takes about 26,000 years to complete each wobble. This means that in 2000 years, the Sun signs are nearly a month out. Your real sign, if you believe in such nonsense, is the one before the one you think it is. If atrologers tell you you were born with the Sun in Aquarius, it wasn't. It was in Capricorn.

While it is true that "astrology" as it is practised today has nothing to do with science, it used to be the same as astronomy over 2,000 years ago.
If you were interested in the names of the constellations in which the sun and planets were when you were born, then you'd consult star charts and "planetarium" type software (e.g., Starry Sky, ECU, Redshift).
However, if you want to know in which astrological "houses" they were, then you must understand that the decoupling between astrology and astronomy took place over 2,000 years ago and precession has shifted the position of the equinox among the constellations.
Called the "First Point of Aries" (constellation Aries: the Ram), the real equinox is no longer in Aries. It has moved into Pisces around 2,000 years ago and is now moving to Aquarius, as in "the Dawning of the Age of Aquarius". However, horoscopes still show the Sun as being in Aries from March 21 to April 20.
It is relatively easy to know where the Sun is, by following the first and last constellations seen on a day-by-day basis. For example, On January 21 in the morning, the easternmost zodiac constellation to be seen in the East just before sunrise is Sagittarius (Mars is in Sagittarius, rising about an hour before the Sun); after sunset, the westernmost constellation to be seen is Capricorn. The Moon (seen as a thin crescent) will be in Aquarius, further above the horizon.
Clearly, the Sun is not in Aquarius on January 21.

You will find the "Horoscopes" section under Entertainment, where it belongs. This is a Science section. Here you will get people like me who will tell you that they were born when the Sun was in the constellation Ophiuchus - astrologers never seem to mention there are 13 Sun signs, and several more zodiacal signs.

You're asking about something to do with a superstitious, mythical, false belief in "astrology." That has nothing to do with Astronomy, which is a science. There's nothing scientific (or real) about astrology. The positions of the stars and planets have nothing to do with your personality, your life, or anything else.
