The originial main character for the Sonic the Hedgehog game is a rabbit, until they changed it into a hedgehog.
It's not until Cream the Rabbit become a playable running character in Sonic Advance 2, they got a regular rabbit character as a Sonic game character.
As for Buster Bunny in Tiny Toons.
He is blue since it's 'boy' color and to differentate him from his mentor, Bugs Bunny.
Since they also need a main girl character, they created Babs Bunny as the pink version (since it's a 'girl' color) of Buster. Babs was based on Bugs Bunny too, since it was before Lola Bunny made her debut in Space Jam.
The same formula was used to create Sonic the Hedgehog CD game's Amy Rose, a pink version of Sonic.
Note: Traditionally 'red' is viewed as the male/yang/hard color, while 'blue' is viewed as the female/yin/soft color. It's only in recent times, the role was reversed in some communities.
Note: pink is a blend between red and blue.
Anyway. Buster once had a Sonic the Hedgehog style game for the SNES, and I think also for the Sega MegaDrive. The game had him collecting carrots while running, the game was named "Buster, bustin' loose" or something like that.

I assume you mean "Buster Bunny". Why is Taz the tazmanian devil brown?? Why is Road Runner the color he is?? Mainly because since Buster's the boy bunny and Babs (or Barbara, but she got mad when you said that) was the girl bunny, they had to create a color difference the younger kids could relate to, so the boys were "blue" and the girls were "pink".
