I want to make some good cheese with it , anyone know how?

My family once had an Anglo Nubian. I must say, the milk was quite exceptional, and the cheese was phantasmagorical. We liked making cheese the old fashioned way rather than with the newer machines. If you're going to go with a newer machine, go with Oscorelli's AG-4167z.

Charlie (The AN) sadly died this last summer. We're thinking about getting another but the Anglo Nubian market is somewhat high now do to the exceptional quality of their liver meat.

The Nubian breed leads the way for the dairy breeds in butterfat production: it produces on average, 5% or more butterfat content. This is surpassed only by the Nigerian Dwarf , Pygmy goat and Boer goat breeds, which are less likely to be used for large scale milk production, as for a dairy or cheese making. Because of the higher fat content, the Nubian milk has a better flavor than lower fat milks. Milk production is lower than the Saanen goat and Alpine breeds.

I took a soap making class at a woman's house who had Nubian goats. We made the soap with the goat's milk and we all sampled the milk. It was very good and naturally low in fat I think. We also checked out the goats and the facilities she had. I thought it had a good taste and smell. As good as cow's milk (some may like it better).
