Stainless that is magnetic is of lowr quality because it contains more carbon. 308 stainless is the kind for long service.

Basically what your talking about is the difference between 300 and 400 series stainless steel.
300 series has more nickle and chromium. 400 series has less chromium and a higher carbon content.
300 series is what is used in food processing equipment. And unless it is chemically treated or overheated to a point where the metals properties are broken down it will stay rust free.
400 series is a cheaper grade. It has very good rust resistant properties but it will rust after a time. It will appear to "spot" rust.
And heres your answer. 300 series stainless steel, especially 304 or 316 series is non magnetic. When you get to 400 series stainless steel you begin to have magnetic properties and the higher the number the stronger the magnetic attachment will be.

Not necessarily... Your non magnetic stainless steels primarily the '300' series are extensively used in food production equipment and marine applications. The magnetic steels primarily being the '400' series are used in high temperature and high impact environments, i.e. jet turbines, nuclear power applications and tooling for large machinery. The qualitative aspect of the steels comes not from the series of the SS but from the manufacturer or mill. I have seen many pieces of 316 SS, one of the most expensive because of its high nickel content, that were full of pits and did not machine or weld properly because of contaminants. But on the other hand I have seen some 400 series that were made for auto exhaust pipes get used for decorative purposes because the quality looked so good.
