The main role that an attorney general plays is to protect the legal interests of the state he serves and the citizens that live there. He or She also is in charge of the office that supervises the District attorneys offices if that particular state.

State Attorney Generals are the attorney for the state. They and their staff represent the state in legal matters.
In criminal law, they decide who to prosecute and what to charge them with. They can also direct the prosecution of the case.
In civil law, they often defend the state against law suits brought by individuals, companies, or other states. They also may sue one of those entities if they feel the state is being unfairly treated.
They do more than that, but these are the basic responsilities of the position.

In state government, the attorney general is responsible for enforcing all that state's applicable laws - for example, child support, cyber crimes, etc. Attorneys General can also take part in lawsuits against corporations, as happened (and continues to happen) with Microsoft, or the AT&T divestiture trial back in 1984, that broke up the old "Ma Bell" Telephone Company, and replaced it with several regional "Baby Bells" (such as Qwest [formerly US West, acquired by Qwest in 2000], Ameritech, Verizon, Southwestern Bell (now SBC), etc.)
