Because if you claim that a certain expense is tax-free or that you will deduct it later at tax time, then if you get audited, they want to see all those receipts.

In case of an audit - you can prove with your receipts why you deducted or declared it on your tax return

Well, to claim it on their taxes to get more back or put them in a lower income bracket....you must have never filed before :)
