possibly labor with a thick sac- didn't break like it was supposed to. The way cows are built for show (such as holstiens) is not very good for birthing mothers- a lot of complications.
Prolapsed uterus is probably not it- the organ is more of a pink or purpley color- not yellow.
I can tell you for a fact that animals eat in labor- my horse ate while giving birth with the foals legs sticking out of her!

Never seen it in a cow, but I've seen it many times in cats when they are getting ready to give birth.
Actually, I've never seen a cow in labor. But, when it starts happening to a cat, they usually act like they don't have any idea what is happening. It sounds to me that it may be the same with the cow.

QueenBee is right - sounds like a prolapsed uterus. She had probably given birth quite recently, but if you saw no calf, then presumably they were already separated. The best thing to do would be to try to find out who is the farmer, so you can let him/her know. they would know it is in their best interest to get a vet to this cow asap. It needs to be stitched back in, and antibiotics administered, before she treads on her own womb, if possible!

I am quite sure the cow was calving. The calves are born in a sack.

It sounds like it was possibly prolapsed. The uterus was erupted out - not good.
