Crystallization occurs when a solution becomes supersaturated with a crystalline solid. The crystalline solid will precipitate out of solution in a special way. Building a crystalline solid. You can create your own crystals with either salt or sugar.

Just put a bunch of either in a pan with a little water. Warm the water up, and mix the solution. Then let the solution cool for like 20 minutes. Filter it through a coffee filter to get the solid chunks of (salt / sugar out). You have a supersaturated solution.

Over the next few hours, crystals will begin to grow as the super saturation condition reverts back to saturated. You can put a stick or a string in the supersaturated solution and the crystals will form on that.
