We as humans are evil in nature. The more you feed into the evil things the worse you become. Your heart becomes hardened and you do things that at one point in time you would care about, but now you dont.
Also the feeling of not being able to get sex the nice way will make them start getting it the hard way.
If they got raped in the past this will phsycologicly scar them. They need counseling. Many of them dont seek counsel and end up being killers or rapist.

Its for sure some type of illness. An association of pain with pleasure. Also, many cannibals have a God complex, and they beleive that eating flesh makes them ONE with what/who they ate...
Fish - what a sick phuck he was. Bad enough he ate a little girl - but did he have to write the account down and mail it to her mother??

I think they are motivated by sex and an urge to eat human beings - I don't think this is really rocket science. Espeacially in Jeffery Dahmer's case because he did not want to bring any publicity to his actions http://en.wikipedia.org/wiki/Jeffrey_dahmer
