Well, in the original Tracey Ullman Shorts Matt Groening made the colors all crazy to catch the attentions of people surfing through channels(They even used to make trees purple and stuff but later abandoned that idea). Since back then the only characters that were really featured were the Simpsons there were no ethnic differences, but when they went for the full season episodes they added more characters(like Apu)so they decided to color them normal. The yellow just represents caucasianthats the way it has always been, and the yellow was probably a little cheaper than a fleshtone color(I mean, its a primary color and all).

Yellow represents white skin. The animators were cutting time and costs originally and just used yellow for a pilot strip and it went down well so it never changed.

Skin is a yellowish tint, and yellow would be easier to animate, rather than flesh tones.
White would probably make them all look dead..lol

Only the Simpsons are yellow...the white people are white...Mr Burns...The Bartender...The Comic Shop Dude...etc...all white...
