Are cattle killed specifically just for their hides or is their meat utilized as well?

defiantly meat as well- meat is worth a lot more than leather. Sometimes, the internal organs (except the stomach and intestines) will be used for animal food as well. We feed the large predators beef scraps - bits of bine, guts, and undesirable (for humans) meat.
To get the most money out of cattle, they will utilize all that they can.
Cattle are not raised for milk- meat cows and dairy cows are completely separate breeds. Most dairy (milk) cows only get used for meat in local butcher shops or by the family.

Cattle are usually raised for meat and milk, and the hides are taken from a subset of those animals when they are slaughtered for meat. Most if not all of the animal is used for something.

I'm pretty sure that they use the meat too. (if they didn't i think the media would be all over it!)
