Actually, fermentation is a type of catabolic (energy releasing) process that occurs in the absence of oxygen. The opposite of a catabolic reaction (one that puts complex molecules together) is called an anabolic reaction.

Catabolic. Catabolic is breaking down a complex molecule and anabolic is building up simple molecules into complex molecules. Fermentation is something completely different.
