Your pancreus (endocrine system) releases insulin that regulates glucose levels.

Your tummy (digestive system) obviously contributes the sugars in the first place.

As for organs:
Pancreas
Liver

I'm pretty sure the brain's involved, but I don't recall exactly what portion - hypothalmus, maybe?
