I was going to say "Castles made of Sand", but I don't know why. It just makes me stop what I'm doing every time I hear it.

I have always liked 1983....A Merman I Should Turn To Be from the Electric Ladyland album. It has this killer guitar instrumental section that keeps building and building. It's one of the first Jimi Hendrix songs I learned on guitar.
