The Restaurant is on 33361 Lee Highway in Glade Spring, VA. They make the best Mushroom Bisque. I had it several years ago and would like to contact the restaurant but I can not remember the restaurant’s name. Does any have the recipe for Mushroom Bisque?

The Swiss Inn that you are talking about was built in 1835. Unfortunately, the restaurant that use to be in the Swiss Inn has closed down. There are restaurants that are within walking distance from the Inn. If you have other questions regarding the Inn, you can call them directly at (276) 429-2233

Here is the recipe for Mushroom Bisque. Enjoy!

Mushroom Bisque
1 pound Mushrooms -- sliced
1 Onion -- medium chopped
1 cup Cream -- heavy (or half/half)
1 quart Chicken broth
7 tablespoons Butter -- less OK
3 cups Milk
White pepper
Sherry -- to taste

Chop mushrooms fine (save some for garnish) and simmer with onion for 30 minutes in broth. Melt 6 T of butter in a small saucepan. Add flour and stir with whisk until blended. Bring milk to a boil and add it to the roux (butter/flour). Add cream, stir until thickened. Add broth and serve with vegetables. Just before you serve, season and add sherry to taste.

MUSHROOM BISQUE

Amount Measure Ingredient -- Preparation Method

2 tb Butter
1 lb Mushrooms
-- very finely chopped
3 tb Onions, very finely chopped
2 tb Flour
4 c Chicken stock
3/4 c White wine
1 Bay leaf
1 pn Nutmeg, freshly grated
3 tb Cornstarch -- dissolved in:
3 tb -Water
1 c Heavy cream -- warmed
Salt -- to taste
White pepper -- to taste
1 tb Fresh parsley, chopped

In a medium large saucepan place the butter and heat
in on medium until it has melted. Add the mushrooms
and onionsm and saute them for 3 to 5 minutes, or
until they are tender. Sprinkle in the flour and stir
it for 2 to 3 minutes, making certain that no lumps
are formed. Add the chicken stock, white wine, bay
leaf, and nutmeg. Bring the mixture to a boil and
then simmer it for 15 minutes. Remove the bay leaf.
Add the cornstarch-water mixture and stir it in well.
Simmer the soup for another 10 minutes. Add the warmed
heavy cream and stir it in. Season the soup with the
salt and white pepper. Garnish the soup with the
chopped parsley.
