Too much talking is not good, and no talking at all is not goo either! Find a comfortable balance. Wait to speak until you are asked a question, then be concise. Towards the end of the interview they will ask you if you have questions, have some prepared before you go. Ask about what their needs are. The whole idea is to sell yourself to take care of their needs. Good luck!

I have been on both sides of the table. I would say that if you are nervous, then that can be infinitely better than being over-confident. The person interviewing you might well be the person you will be working for or with, and so showing some deference is better than coming over as if you will be telling him/her how to do their job.
It really depends on what the next job you go for will be and who is (are) the interviewer(s). A consulting role might demand you are suitably confident of yourself, whereas a supporting role might require you to be less knowledgeable and capable than the person you are supposed to be supporting. (or at most equal)
I would say go along to the interview as if you are interviewing them. When you see it that way, you will not be disappointed when neither of you think that your employment would be a good idea.

Well, since you have been on several interviews already, you know the types of questions that they are asking....prepare your answers somewhat ahead of time and tweak them at the actual resume when speaking with the person. You're rambling because you're nervous. Before you answer each question, take kind of a deep breath and try to relax. Think of specific examples of things that they have been asking about (called behavioral interviewing) so that you have actual instances that you can site. Best of luck to you...

Yeah, it's the same with me I have an interview on Monday and normally I am nervous... but I really want this job as it could open some doors for the future for me......
I have decided that instead of being nervous I am going to go with a little list of questions try to get to the place of work early and stay calm and just try to have a calm confident attitude/look and just answer and ask the questions and hope I get the job GREAT ! but if not just try and find another....

Role play practise with feedback can help a lot. See if friends who have been on the other side of the interview table will do a few dry runs with you and let you know what to improve and what to keep.

let the interviewer ask all the questions to start with
tell them before you start how nervous you feel and they will try to put you are your ease
tell yourself - in your head- i can do this -i am good for this job and they will be lucky to have me work for them
