Cut top and bottom, this gives you a flat surface to rest the pineapple on while you cut the skin off top to bottom in 1-2" strips.
After peeling, quarter the pineapple, top to bottom. Lay each resulting wedge on the cutting board and cut off the core.
You can then cut spears, 'fans' (Slices) or chunks. If you desire
pineapple rings as the end result, peel pineapple as above and slice whole pineapple, the use a cookie cutter or knife to remove the core or 'rind'.

Slice off the top. Slice the pineapple in half lengthwise, then cut half of that in half. Slide a knife between the fruit and the skin and separate the skin from the fruit. Use the knife to cut a V shape down the length of the fruit to remove the core. Don't cut and core the other pieces until you are ready to eat - keep them in fridge wrapped with saran wrap until you want them. Hope it helps.
