Make a Blood Elf Paladin. Failing that, an Undead Warlock.

I have a shaman that is absolutely brutal damage dealing. I have some gear of "Nature's Wrath" which, when added to my elemental specced shammy, just pulverizes stuff. You can find this gear anywhere, and it's great for soloing, or PVP'ing, because every spell is like a crit with regular gear.

But rogues are wicked DPS too...get the drop on a guy, and you can mutilate him without taking much damage...

Every instance I've been into, we've used MOD's to figure out who was the biggest damage dealer, and wether I was playing my rogue or shaman, I'm always at the top of the list.

Play around a bit. I found both classes to be tons of fun, and reasonably easy to level too!

Really if you were going to roll a dps shaman you would want to go with enhancement, for the dw and windfury action, and then supplement that damage with shocks. Shaman are the game's "hybrid" class, which means that they "can" do anything (dps, tank, heal) that doesn't mean they neccessarily "should."
If the idea of ranged damage in mail armor is what you like then hunters are a lot of fun to play.
If you seriously only care about damage output and crits then the rogue would be the way to go, since they have low armor damage is pretty much all they have going for them. I personally like rogues, but shaman are more popular for groups.

I usually create two characters and have their professions complement each other. For example, a warrior with mining/blacksmithing and then a character who has enchanting to enchant the armor.
