You take a class but it isn't for a grade. This might be a class you want to take but don't want to go on your record because you are afraid of failing it, or it may be a class outside of your major, or a class you just want to take with no strings attached. Regardless, auditing a class means you don't get a grade for it.
I don't know about the accountant kind of auditing, that's something like the auditors (whoever they are) look at the financial records of a business or company and check the taxes or something like that.

Simply, auditting is checking that things are as they should be.

I work for a plastics factory and there are many types of management system which get auditted by different authorities/organisations.

The best example is, we illustrate the product we sell is off good quality by adhering to certain requirements of ISO9001/9002. BSI audit us and this takes a number of forms - checking that our product passes certain quality tests which are standard across industry, checking that we are producing to criteria that we state for quality aspects such as colour, gloss, shape. Also if necessary checking our written quality procedure to make sure we are adhering to them.
