Plecos can change color at will to blend in with their environment. Sound perfectly normal to me.

This sounds bad, but could be him blending in to his soundings. My clown pleco started out light brown, but turned dark brown to match his favorite piece of drift wood. (I swear he never leaves it during the day.) On the other hand it could be stress. Is he getting enough to eat? Does he get enough roughage? Does he have a hiding place? Does he have driftwood to munch on? Have you tested your nitrates???

Signs a pleco is under fed.
- feeding during the day
- hoovering the gravel when you feed the rest of the fish
- tank is spotlessly clean of algae

Things to feed:
(note that he will generally wait for fresh food to soften. So give him a day or 2 before removing excess.)
- zucchini slices
- sliced broccoli stems
- algae wafer
- bottom feeder pellets

the starch from potatoes help with colouring so peel and slice a bit of potatoe and drop it in for them in the evening make sure you take it out the following morning to avoid polluting the water. this can be done now and then.
also feed them cucumber and lettuce

plecos often change color in the wild, and some species are noctornal(though not many) you probably dont have anything to worry about, a change in the coloration of any freshwater fish shouldnt alarm you too much. if you ar really conserned watch his behavior to see if hes been acting strange lately. if its sick watch for it scratching up against rocks and running into things(if its not being chased). also try feeding him some algae wafers, they are made mostly for plecos and will take care of any food problems your having with it
