yakitate Japan!!, though is about a boy who tries to create the best japanese bread ever, Japan!! is very funny and very interesting.

I would say Fooly Cooly or FLCL as some call it. It is a deep but fuuny anime that you will more then likely watch many time both for more enjoyment and to see if any of it makes any more sense after you've seen it all. (BTW it doesn't)
