Usually, the ones who make that claim believe that the second law can be reformulated to show that complex ordered systems cannot arise through natural processes. If that were true we wouldn't have hurricanes. Essentially, the creationist claim is based on a misunderstanding of the concept of entropy. They think that since it's colloquially described as being similar to "disorder," that all forms of disorder are entropy and all entropy is disorder.

Electrical power plant design, engine design, electrical motor design, calculating how much power that a factory will use, calculating the size of the engine required for a certain model of automobile, calculating engine efficiency (I.E.: mpg), etc.
