A little history:
I worked for "Company A" for 5.5 years, at which time, it was acquired by "Company B", and the name was changed to match that of "Company B."

Soon, "Company B" wanted to move everything to another state (which I checked out, but didn't like), so I went to work for a competitor at "Company C."

I worked at "Company C" for 2.5 years, when "Company B" came around and bought us! The name of "Company C" was changed to reflect the fact we were now "Company B", and my time was merged to show 8 years of service with "Company B."

Eventually, they wanted us to move again. Knowing I didn't want to live there, I went off and found a job at "Company D", in an entirely different industry.

Back over at "Company B", they've since changed their name to "Company E", so everyone now knows them as such.

Now, how in the heck do I reflect this on my resume', when all HR records are under "Company E", but the names have changed over the years?

I went through a similar situation. List it as the current name, Company E, and in the description put I worked for Company E as it transitioned from Company A to Company B to Company C to Company D and now operating as Company E. You can then get into the details on your interview if necessary.

Use the last name it was before you left but then in brackets say now known as company E.

Use the current name and years spent with that office. When asked you can explain.

You are supposed to use the name as it was when you worked there.
