If you're talking about the old Hank Williams song ...

Jambalaya is a common Cajun dish, kind of like rice with a thick brown gravy with sausage, vegetables, and maybe shrimp and/or crawfish in it. Kind of like gumbo (also Cajun food) but less of a soup.

And if you didn't already know what Cajuns are, it's kind of an ethnic group down in Louisiana. They usually have French ancestry, mixed in with other races (white or otherwise) and some of them speak kind of a redneck version of French.
